PawPaw Peach Habanero Shrimp Stack

For this tasty and healthy little shrimp number I thought I would kick it with our PawPaw Peach Habanero sauce.

Serves Two

Ingredients:
2 Tbsp Chives (finely chopped)
1 Stalk Celery (finely chopped)
1/4 small red onion (finely chopped)
1/2 pound shrimp cooked and diced. Reserve 8 for topping the stack.
3/4 cup greek yogurt
1 Tbsp Lemon juice
5 Tbsp Pup & The Pepper PawPaw Peach Habanero hot sauce
2 slices wheat bread
1 tsp butter
Sale and Pepper to taste
Old Bay seasoning

Directions:
Start by combining the chives, celery, red onion, lemon juice, greek yogurt, PawPaw Peach Habanero how sauce, shrimp, salt and pepper in a bowl and mix. Place back in refrigerator.
Using a deep circular cookie cutter or food mold, cut out rings of the bread, save the remaining bread for the next morning for eggs in a basket (coming soon). Spread the butter on the cut out circles and pan toast until crispy. Using the mold, place the toasted bread in the bottom and spoon the mixture on top of the toast, place the reserved whole shrimp on top and sprinkle with Old Bay Seasoning. Garnish with chives or cilantro.
